Ash Plantain White Curry


Ingredients:
3 Ash Plantains
1 onion sliced
2 green chillie sliced
1/2 tsp fenugreek seeds
1'' cinnamon stick
1 1/4 tsp salt
1/2 tsp curry powder
1/4tsp chillie powder
2 cups light coconut milk (add 1 cup water to coconut milk) 1/2 cup coconut milk

Method:
Wash the plantains well and remove the skin by cutting along its length with a knife.
Cut the ash plantains in half and cut each piece into quarters. Put the pieces in slightly limed water. Drain water and rub the pieces in little grated coconut and wash pieces well.

Add the pieces to a cooking pot along with all the ingredients except 1st extract coconut milk.
Cook till the plantain is almost cooked and gravy is reduced.
Add 1st extract of coconut milk and bring to boil and take off fire. Serve with rice as a side dish.
